A hearty dish with a poetic name, Himmel und Ähd is made from black pudding, onions, mashed potatoes and apple sauce. Christian Benninghoven, who manages the farm, grows special Wellant apples (‘the sky’) and Madeira potatoes (‘the earth’) to create a uniquely sustainable interpretation of the dish.
